Introduction:

Ionone is a terpenoid with three isomers depending on the position of the double bond.

Application:

Ionone belongs to the roseone group and is found in a variety of flower essential oils including rose essential oil. Beta-ionone is a major contributor to rose aroma, although its content in essential oils is relatively low. Ionone is an important fragrance chemical used in perfumes, spices and seasonings. Ionone is derived from the degradation of carotenoids in organisms.
